Cafes, similar to supermarkets, have contracts that determine what hand dryers to be installed. However, a lot of cafes can be franchised and have their own dryers. Due to the large variety of dryers in franchised locations, I have grouped them into "Anything Else"

Usually AIKEs under dryflow or HandyDryers. Some older stores may have something else but they are rapidly being replaced.

Starbuck's
Starbucks used to use whatever cheap dryer exists as they didn't have a contract, so no matter whether you go to a franchised store or not, you were never really sure what to expect. The store located at Starbuck's HQ had a Dyson Airblade V AB08.
As of 2023 however (following a 2022 trial in the Chiswick store), Starbucks have signed a contract with PHS and airstream pures are being rolled out to all stores across the country. Some smaller places still don't have PHS yet. EG Franchised locations commonly have Velair pebbles
